"Παρασκευή" (the greek word for Friday) means "preparation"?  Is this true?

Yes.  The word “παρασκευή” comes from the verb “παρασκευάζω” which means “προετοιμάζω” (prepare).

Other modern Greek words with the same etymology are “προπαρασκευή”, “προπαρασκευαστικός”.
