Hello,

Is it accepted to address someone by name while using the polite form of σας instead of σου?

For example, 'γεια σας Γιώργο' or 'Νίκο, σας ευχαριστούμε'

The context of usage would be with someone who shared their name and contact with me, but not knowing them I would like to maintain a polite tone. I am afraid that using κύριε with their surname sounds too formal and cold.

It is not really acceptable to use it.

We say "Γεια σας κύριε Νίκο" in order to be polite but if you believe that it is too formal, you can use

"Γεια σου Νίκο/ Καλησπέρα Νίκο".
