καλή τύχη

καλή επιτυχία

καλή ευτυχία

τύχη = luck

καλή τύχη = good luck, good fortune

ex: Καλή τύχη στη νέα σου δουλειά = good luck with your new job.
Καλή τύχη στη συνέντευξη = good luck with your interview

Για καλή του τύχη δεν τον είδε ο αστυνόμος = Luckily for him, the policeman did not see him.

Είχε πολύ καλή τύχη και κέρδισε το λαχείο = He had a very good fortune, he won the lottery.

επιτυχία = success

καλή επιτυχία = good luck, I wish you to have success

ex: Καλή επιτυχία στη νέα σου δουλειά = good luck with your new job, I wish you to have success at your new job.
Καλή επιτυχία στη συνέντευξη = good luck with your interview, I wish you to have success at the interview.

ευτυχία = happiness

We do not use the phrase "καλή ευτυχία".

In the case of the job/interview, yes, they are interchangeable.  In other cases there can be a small difference.  For example when buying a lottery ticket you would rather say "καλή τύχη" (good luck) and not "καλή επιτυχία" (good success).  Lottery is pure luck.
