I would like to know when we use in regards to the dates and the time.... Τη, την, στη, στην and στις, τις.... For example...

How do we say, the 1st of April, between the 2nd and the 3rd of May, after the 10th of May.

On the 5th of may /between the 1st and 3rd of  May / after the 10th of May/ before the 12th of May etc.....

For singular number (την/τη, στην/στη), we use την/στην when the next word starts with κ, π, τ, ψ, ξ or with a vowel (α, ε, η, ι, υ, ο, ω).  If the next word starts with any other letter, then we use τη/στη.

Examples:
την πρώτη Απριλίου = on the 1st of April
στη μία Απριλίου = on the 1st of April
την έκτη Απριλίου = on the 6th of April
τη δεκάτη Απριλίου = on the 10th of April
μετά τη μία Μαΐου = after the 1st of May
πριν την πρώτη Μαΐου = before the 1st of May

For plural we use "στις".

Examples:
στις δύο Μαΐου = on the 2nd of May
στις πέντε Μαΐου = on the 5th of May
στις έντεκα Μαΐου = on the 11th of May
στις εικοσιέξι Μαΐου = on the 26th of May
ανάμεσα στις δύο και στις τρεις Μαΐου = between the 2nd and the 3rd of May.
μετά τις 10 Μαΐου = after the 10th of May
πριν τις 12 Μαΐου = before the 12th of May

Example of both singular and plural in the same sentence:
ανάμεσα στη μία και στις τρεις Μαΐου = between the 1st and the 3rd of May.

You may hear people say “στις μία Μαΐου”, however it is grammatically wrong.

Times follow the same exact rules.
Examples:
στη μία η ώρα = at one o'clock
στη μία και μισή = at one thirty
στις δύο η ώρα = at two o'clock
στις δέκα και μισή = at ten thirty
στις έντεκα η ώρα = at eleven o'clock
στις δώδεκα και μισή = at twelve thirty
ανάμεσα στη μία και στις τρεις η ώρα = between one and three o’clock.
